Kodo Millet Kara Boondi or varagu arisi kara boondi is a delicious and healthy diwali snack that can be made in a jiffy.For this recipe I
have used store bought kodo millet flour .Make sure that you sift the flour before using. First time when I tried this recipe I used 1 cup kodo Millet flour and only 1/2 cup besan flour but I felt that in this ratio the Kara boondi was bit hard so I increased the ratio to 1 and 3 /4 it came out well, you can even use 1:1 ratio of millet flour and besan flour . Ingredients

Kodo Millet flour -1 cup
Besan flour -3/4 cup
Red chilli powder-1/2-3/4tsp
Salt to taste
Asafoetida-a pinch
Baking soda- a pinch
Cashews-few
Peanut-1/4 cup
Curry leaves few
Oil for deep frying

Method

👉In a mixing bowl add kodo millet flour,besan flour,salt, asafoetida, baking soda mix well.

  👉Add water little by little and make to bajji batter consistency.

👉Heat oil in a kadai for deep frying.
  👉Pour the batter on to a perforated laddle or Boondi karandi.

  👉Gently tap the karandi .

👉Cook the kara boondi in medium flame until the oil stops sizzling and colour changes to golden brown.

👉Drain the excess oil in a tissue paper.
👉Now in the same oil fry the peanuts,cashews and curry leaves separately.

👉Transfer all the fried ingredients to a mixing bowl.Add required amount of red chilli powder and extra salt .Mix everything well.

👉Healthy and tasty kodo millet kara boondi varagu arisi kara  boondi is ready .
