Ingredients

Tender coconut water -2 cups
Tender coconut malai (meat)- 1 cup
Curd -1 cup
Salt a pinch
Sugar to taste
Ice cubes -10 nos

Method

👉Place all the ingredients in a mixie jar and grind to a frothy paste.
👉Serve chilled or as such .Enjoy.

Sakkarai valli kilangu varuval or sweet potato roast is an yummy way to cook sweet potatoes.It is a very simple recipe and requires just basic ingredients and can be prepared quickly .It is comparatively an healthy option to our regular potato roast .Do try this delicious sweet potato roast recipe.

Ingredients

Sweet potatoes -1/4 kg
Onion -2 nos chopped
Ginger -1 inch piece chopped fine
Garlic -4 cloves chopped fine
Red chilli powder -1 tsp
Dhaniya powder -2 tsps
Turmeric powder -1/4 tsp
Cumin powder -1/2 tsp
Garam masala -1/4 tsp (optional)
Mustard seeds -1/4 tsp
Cumin seeds -1/2 tsp
Red chillies -2 nos broken
Curry leaves and coriander leaves few
Oil -1 -2 tbsps
Salt to taste

Method

👉Wash ,scrape the skin and cut the sweet potato into slightly thick disc shapes.Boil them in water for 5 mins or until they are 3/4 th done.Drain the water and set aside.


👉Heat oil in a pan add mustard seeds,cumin seeds,red chillies,curry leaves and allow it to crackle.

👉Add in the onion and saute until they are translucent .Add the ginger and garlic and saute well.



👉Add the red chilli powder ,dhaniya powder,turmeric powder,cumin powder and garam masala powder and sauté for few seconds.

👉Add the cooked sweet potato and add required salt and combine everything gently.

👉Roast the sweet potato for 5 -10 mins until they get a nice golden colour and become slightly crispy.Add oil if needed.


👉Garnish with coriander leaves and serve hot with sambar rice ,rasam,curd rice etc.
