Rava kesari

Rava kesari is a yummy classic South Indian sweet made with semolina or sooji, sugar n ghee. It is a very basic sweet variety and can be prepared in a jiffy. Check out how to make perfect rava kesari recipe below.


Ingredients

Roasted Rava (semolina) - 1 cup
Sugar -1/2 -3/4 cup
Cardamon powder -a pinch
Cashews n raisins - few
Ghee -2 tbsps
Food colour( kesari colour/ lemon yellow colour) -a pinch
Water -2 1/2 cups

Method

👉Heat ghee in a kadai add cashews and raisins and sauté them until golden brown.

👉Next, add 2 1/2 cups water and allow it to boil.
Add food colour and cardamom powder, mix well.

👉Once the water comes to a rolling boil add rava and swiftly mix everything well without any lumps.
👉Continue to stir until the mixture thickens a bit and rava is cooked.


👉Now add sugar and mix well and let the sugar dissolve completely, the mixture will become watery again so allow the kesari to thicken.



👉Remove from fire n serve.

Note

✍️If you are using unroasted rava first roast it in ghee and then add.
✍️Add sugar n ghee according to your taste preference.
