Double layered Chocolate Burfi

Double layered chocolate burfi is a yummy Indian burfi (fudge) variety made with the milk powder, cocoa powder and sugar. As the name suggests it has two layers one regular mawa(khoya) layer and the other is the chocolate layer made with khoya and cocoa powder.In this recipe unlike using milk to make khoya we use milk powder which quickens the process of making the burfi. .It is very easy to make and can be done quickly. Another variation of this burfi is made using saffron called  KESAR burfi, for this burfi you have to mix saffron strings soaked in warm milk to the khoya and rest of the procedure is the same (you can make the kesar burfi single layered or double layered). Try this chocolate burfi for this Diwali.

Ingredients

Milk powder -300 gms
Milk -250 ml
Powdered Sugar -1/4-1/2 cup
Ghee -1/2 cup
Cardamom powder -1/4 tsp
Cocoa powder -1 tsp

Method

👉In a heavy bottom Kadai add milk and bring to a boil.Now sim the gas and then add milk powder and continuously keep stirring to prevent lump formation. Continue to stir for 5 minutes.


👉Once the mixture is slightly thick add sugar, cardamom powder, ghee in batches and mix well. KEEP STIRRING CONTINUOUSLY.

👉After 10 minutes the mixture leaves the sides of the kadai and form a big mass this is called mawa/ khoya. Remove from the heat.

👉Divide the mawa/milk solids into two equal parts.

👉Meanwhile in a plate or tray lined with butter paper. Spread some ghee on to the butter paper. Keep a spatula smeared with ghee also ready.

👉Now transfer one part of mawa on to the tray and spread evenly using a spatula. Set aside.

👉Then to the remaining batch of mawa add cocoa powder and mix well.

👉Transfer this on top of the first layer in the tray and spread evenly.

👉Keep the burfi tray inside the fridge for 2 hours. (NOT IN FREEZER ).
👉After 2 hours remove the burfi tray from the fridge, remove the butter paper and then cut the burfi into desired shapes.

👉Serve.

Preparation Time -20 mins 
Yield -16 -20 nos depending on size
